Mocha Almond Baked Oats

This delicious plant-based recipe from Nourishing Amy is easy to make and can be enjoyed hot or cold, depending on how you're feeling. The recipe serves 1 but can be easily double up for more.

Valentines Day Cookies


I/2 cup (45g) oats

1 tbsp coffee (1tsp coffee with 1 tbsp hot water)

1/2 tsp baking powder

1 scoop vanilla protein

1 tbsp cacao powder

1/3 cup + 4 tbsp (125ml) plant-based milk

1 tbsp chia seeds

1 banana

1 tbsp almond butter

Serving suggestions: yoghurt, more almond butter, figs and chia seeds.

  1. Preheat the oven to 160Fan/180*C.

  2. Mash half of the banana and slice the second half. Stir the mashed banana with the oats, coffee, baking powder, vanilla protein, cacao powder, milk, chia seeds and almond butter until thick.

  3. Pour into a small ramekin and top with the remaining banana slices and bake for 30-35 minutes until risen and firm to the touch.

  4. Serve warm or cold with yoghurt, fruit slices, more almond butter and a sprinkling of chia seeds.
