Valentines Day Cookies

Chilli Nachos

Chilli con carne is the perfect comfort food and this tasty recipe is extra easy to make. Great for whacking on and leaving to cook, serve it with nachos, soured cream, guacamole and grated cheese for an exciting midweek or weekend meal. It stores well and actually tastes better the next day so keep your leftovers for your work lunches or dinner the next night!

1 large red onion chopped

2 cloves garlic, finely chopped

1 red chilli deseeded and finely chopped

Olive oil, for frying

500g good quality beef mince

3 tsp ground cumin

4 tsp paprika

3 tsp harissa chilli powder

1 tsp dried oregano

Good lug of Worcester sauce

1 cup of red wine

400g chopped tomatoes

3 tbsp tomato puree

400g kidney beans, drained and rinsed

salt and pepper

200ml soured cream

Tortilla Chips

Mature cheddar


1. Sweat the onion, garlic and chilli in 2 tablespoons of olive oil in a large saucepan until softened.

2. Make a well of the onion mixture in the pan and add the mince into the centre of it, stir in until browned.

3. Add the dried spices, tomato puree and Worcester sauce and mix well.

4. Add the tinned tomatoes and leave to cook for about 5 minutes.

5. Add the wine and bring to the boil, before leaving to simmer. Once the sauce has thickened a bit more, add the kidney beans and red wine and leave to cook for around 30-45 minutes on a low heat (although the longer it’s cooked, the better it tastes).

6. Stir occasionally so doesn’t stick to pan, and keep adding the paprika, Worcester sauce, chilli and cumin plus salt and pepper to taste as you go along.

7. Serve on top of tortilla chips, with a good dollop of soured cream, guacamole and some melted cheese grated on top. You can also garnish with red chillis for extra heat.

For a vegetarian alternative, substitue the mince for chickpeas, cannellini beans and roasted sweet potatoes (roast for 40 mins beforehand).
