Ingredients

50g pancetta

25g perorino cheese

25g parmesan

2 eggs

200g spaghetti

1 garlic clove

25g unsalted butter

Salt + pepper to season

Method

  1. Finely chop the pancetta into small cubes
  2. Grate the two cheeses and mix together and beat the 3 eggs in separate bowl
  3. Cook the spaghetti in salty water (see packet instructions for timings)
  4. Place a frying pan on the hob, add the butter and wait until melted
  5. Squash and add the garlic cloves and the pancetta to the pan and stir
  6. Remove the garlic from the mix when the pancetta is crispy
  7. When the pasta is cooked, drain and save a little pasta water
  8. Add the pasta to the pancetta mix and stir
  9. Add the eggy cheesy mix to the pasta and stir to avoid the egg cooking
  10. Add in the extra pasta water if needed to loosen the mixture up
  11. Season and serve with extra cheese and some herbs!
