This creamy Korean-inspired one-pan baked dumpling dish is the perfect balance of comfort and flavour. Handmade cabbage and pork dumplings are baked in a rich gochujang sauce until bubbling and creamy. All in one tray for an easy, satisfying meal.
- Step 1Salt cabbage, rest for 10 minutes, squeeze then set aside.
- Step 2In a large bowl, mix the pork mince with the remaining filling ingredients until sticky. Stir in the squeezed cabbage. Chill mixture for at least 2 hours.
- Step 3Place filling in the centre of a wrapper, moisten edges, fold into a half-moon and seal the centre. Pleat from the centre outward on both sides, keeping the back edge flat. Seal firmly.
- Step 4Gently stir together all the sauce ingredients in an oven-safe tray.
- Step 5Add coriander, courgette and dumplings, leaving tops exposed. Cover with foil and bake in preheated oven at 190°C for 20 minutes, or until the dumplings are cooked through.

- Dumpling wrappers
- 330g finely chopped sweet cabbage
- 1 tsp salt (for cabbage)
- 165g pork mince (20% fat recommended)
- ¼ tsp salt
- ¼ tsp grated ginger
- 20g spring onion whites, finely chopped
- ½ tsp white pepper
- 10g soy sauce
- 10g oyster sauce
- 10g sesame oil
- 15ml chicken stock or water
- For sauce
- 20g gochujang
- 25g tomato purée
- 10g minced garlic
- 1 tbsp honey or sugar
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 200ml kombu dashi or chicken/veg stock
- 200ml milk
- Other ingredients
- Courgette, thin half-moon slices
- Coriander or spring onions + sesame seeds
