Roasted cherry, mascarpone and basil toasts

Cooking cherries whole makes them extra tender. This simple toast recipe puts them centre stage for a vibrant and interesting summer breakfast.

Summer is when stone fruit like cherries are at their flavour peak, so it pays to eat them now.
Heating cherries reduces the fruit's water content, intensifying the cherry flavour and turning the juices into a natural syrup. Recipe by @pickled_plates_food_stylist.

Method
Ingredients
  • Step 1Pit the cherries over a pan. Discard the stones then place over a low heat with the sugar, lemon juice and a dash of water.
  • Step 2Simmer until the cherry skins are just starting to split, then remove with a slotted spoon.
  • Step 3Turn up the heat and reduce the liquid to a syrupy drizzling consistency then pour back over the cherries and leave to cool.
  • Step 4Toast the bread then cut into pieces. Spread over the mascarpone then top with cherries and drizzle with syrup. Garnish with small basil leaves and serve.
