Roast potatoes are a highlight of Christmas dinner, and there is no rushing them. We’ve enlisted the help of Elliot Hashtroudi, chef and owner of Borough’s Camille to bring you his recipe for the ultimate roast potatoes. This is everything you need to know for roasties that are crispy on the outside, and light and fluffy on the inside.
The variety of potato you use is important here, so be sure to pick something that’s low in sugar so it doesn’t caramelise too quickly. A Maris Piper or a King Edward is a good choice.
- Step 1Preheat the oven 200C. Peel your potatoes and add them to a pot of cold, salted water. Bring to the boil then boil for 10-12 minutes.
- Step 2Allow to steam dry thoroughly and then fluff the edges by tossing them lightly in a colander.
- Step 3Heat up your beef or duck fat in an oven-proof pan, then sear the potatoes and cover them in the hot fat. Add salt and the garlic and thyme to the pan.
- Step 4Place the pan in your oven and roast on high for 15 minutes, before lowering the heat to 180C. Turning and coat the potatoes in hot fat at regular intervals.
- Step 5After 45 minutes - 1 hour the potatoes will be crispy all over and ready to eat. Enjoy.
- 5-8 medium Maris Piper potatoes
- 250g beef or duck fat
- A couple of sprigs of thyme
- 2-3 garlic cloves
“We really want to let them steam dry. The drier the potato, the crispier the result.”
- Elliot Hashtroudi, chef and restaurant owner
